Easy and Delicious Pumpkin Pie Smoothie Recipe


Today was a crisp winter day, and with the holidays lingering close by, I decided to make a pumpkin pie smoothie. It tastes just like pumpkin pie, except without all the sugar and carbs.

Pumpkin is full of Vitamins A, C, E, and K, and it delivers substantial amounts of iron, magnesium, potassium, and manganese. Because I don’t tolerate dairy, I omitted yogurt. However if you can have dairy without a problem, adding a good greek yogurt would add to the texture. Another ingredient I used is Pumpkin Pie Spice. You may not have it on hand but can make it by blending combinations of cinnamon, ginger, and nutmeg (a little more cinnamon than the other two), with optional cloves, allspice, and mace.

Here is my Pumpkin Pie Smoothie, I hope you enjoy!

This recipe was made in my Vitamix. You may have to scale it according to your blender's size.

1.5 oz Can of Organic Pumpkin

1 Organic Red Apple of Choice

1 Tbsp Pumpkin Pie Spice

3 Tbsp Ground Flax Meal

3 Cups, Coconut Milk, or Almond Milk

3 Cups of Water

½ Tsp Organic Vanilla Extract

Optional: 2 cups of Greet Yogurt

Optional: Crushed Pecans

Optional: Shaved Dark Chocolate to garnish

Ice
