Delicious Shamrock Green Smoothie
Just in time for
St. Paddy's Day!
I read the reviews of the McDonald's Shamrock Smoothie, and they told of how much people loved it! So I decided to try to make one that is a tad healthier, leaving out the dairy (for those who are sensitive to dairy) and substituting with Coconut Milk, while adding in some nutritious ingredients, including banana, avocado, matcha powder and kale. You won't feel guilty at all having this smoothie treat!
Here's what I came up with:
Shamrock Green Smoothie
1 1/2 cups unsweetened coconut milk
1/2 avocado 2 tbsp. honey (optional)
1 tsp. matcha powder 1 handful of spinach
1/4 tsp. pure peppermint extract
1/8 Tsp Vanilla
1 cup ice
Note: Start with 1/4 teaspoon peppermint extract, and give it a taste as it can be strong. If you need more add it then.
Mix all ingredients in Vitamix or blender, enjoy!
Optional: Garnish with your favorite whipped cream, fresh mint, and cacao nibs.
